Clementine is an award-winning neighborhood eatery in Castle Hills, dedicated to serving a rotating menu crafted from ingredients sourced throughout Texas. The kitchen is helmed by Executive Chef and owner John Russ, whose simple techniques and careful sourcing transform familiar dishes into vibrant, flavor-packed plates.
One highlight on the menu is the smash burger, which is cooked on a flat top with butter, salt, and pepper, then topped with caramelized onions cooked with sherry and Marsala, white cheddar, and a mushroom demi-glace—making it a knife-and-fork affair. Other tempting options include baba ganoush made with black sesame tahini, roasted eggplant, smoked trout roe, and fresh cherry tomatoes; a mushroom salad; and a vibrant beet salad enhanced with Rio red grapefruit and crunchy tahini granola.

Uchi has been serving its renowned Japanese cuisine in Dallas for over a decade, expanding from its original location in Austin, which opened in 2003 under the leadership of award-winning chef Tyson Cole. Executive chef Rhonda McCullar now leads the kitchen, keeping the sushi program at the heart of the restaurant.
The tempura ebi is expertly fried to create a light, airy crust, while the seared scallop is enhanced with a golden sear and paired with shirodashi-compressed heirloom tomatoes and nakiri butter. Sushi lovers will appreciate the madai, or Japanese sea bream, dressed with lemon zest and shiso leaf, and the akami, which features bigeye tuna brushed with aged tamari and finished with negi dare. A piping hot kinoko nabe arrives in a clay pot with Japanese mushrooms, sesame relish, and an egg yolk added tableside, while the hama chili irresistible pairs Japanese yellowtail with sliced oranges, Thai chili, golden tobiko, and ponzu.
